G for gorgeous mini iced jam muffins

I thought I would whip up a batch of mini muffins to make up my letter G.

I used the following ingredients for the muffins

115g stork margarine

115g castor sugar

115g self raising flour (sieved)

2 eggs beaten

 Preheat your oven to 170° (fan oven) or gas mark 5.

Using my favourite piece of kitchen equipment, my pink Kitchenaid, I creamed together the margarine and sugar until pale cream in colour.

Gradually add the beaten eggs until well mixed. Add the flour and mix for a couple of seconds

You do not need a fancy mixer, the margarine and sugar can be creamed together with a trusty wooden spoon, then the flour folded in using a metal spoon.

I have a glut of homemade jam at the moment so I decided to add two heaped teaspoons of my blackberry and damson jam to the mixture. Yum!

I then filled my mini muffin cases with about 1 teaspoon of mixture. These then went into the fan oven at 170° for about 10 minutes.

I then let them cool down on a rack whilst I made the butter icing. I mixed 120g of icing sugar with 60g butter, again using my mixer.

I split the icing sugar mixture into four and added a couple of drops of food colouring to each.

Then using a large nozzle and plastic disposable icing bags (anything for an easy life) i squeezed the icing onto each mini muffin, then a covering of sprinkles topped off with a solitary smartie!

Simple, unfussy mini jammy muffins lovely with a cup of tea!
