Well it was certainly a quiet Scooby walk this morning across the fields with the fog lying low, no Red Arrows flying overhead or tractors ploughing away.
I was certainly ready for my morning porridge as it was so cold. The adding of cinnamon, flax seed and homemade apple jam was a must! My breakfast gave me the inspiration to make some homemade cakes with apple, cinnamon and ginger for a bit of winter warmth!
I love the combination of cinnamon and ginger and I often have it in my herbal teas.
So into the glorious Kitchenaid go the ingredients for my cakes, a quick and simple recipe that can be mixed up in a matter of minutes.
200g brown sugar
200g self raising flour
2 apples peeled and chopped
1 tsp cinnamon
1 tsp ginger
I creamed the butter and sugar first, then added the beaten eggs and flour. Once mixed I added the cinnamon, ginger and apples.
The mixture was then ready to go in the cake cases, and my new cases which I received for Christmas were just the thing, they are so pretty. I cooked them for about 18 minutes at 180 ° (fan oven).
They looked like little sunshines in their paper cases, just the thing to brighten a dreary day.
I covered some with butter icing but they looked just as nice without.
They even made me smile when I’d eaten one it looked like a beautiful flower!
